My grandfather opened Valdrano in Modena in 1962 with six tables and a recipe for ragù that took him twenty years to perfect. My father moved the kitchen to Chiang Mai in 1987, believing good food needed no passport. I run it now, and the ragù is still the same.
We don't have a long menu. We don't take shortcuts with ingredients. We don't explain why the pasta is made fresh each day — you'll taste it.
